Basic Health(ier) Cookie Recipe

Basic cookie recipe

This is my basic cookie recipe. It’s great as is, but sometimes I add raisins or dried cranberries. I like to use crunchy peanut butter for added crunch or sometimes I add chopped walnuts or almonds. Anything goes really!

1 stick (1/2 cup) of butter - room temperature

½ cup peanut butter (all natural no sugar)

1/3 cup packed brown sugar

1 teaspoon vanilla

1 egg

1 teaspoon baking soda

½ cup of oats

1 ¼ cups whole wheat flour

½ bag (or 1 cup) of chocolate chips

Preheat oven to 350 degrees.

Cream butter, peanut butter and sugar together. Add vanilla and egg, then mix.

Add the rest of the dry ingredients and the then stir in the chocolate chips last.

Drop tablespoonfuls onto baking sheet. Bake for 12-14 minutes or until lightly browned on top.
