Coconut Granilla (Granola)


My 6 year old calls granola "granilla" and I refuse to correct her! This granola is made with shredded coconut and coconut oil. Coconut oil is a solid when you buy it, you need to melt it when measuring it for recipes, but it adds an extra coconut (ty) flavor to the granola. My favorite way to eat it is to sprinkle some on top of greek yogurt, especially when it is warm from the oven. Delish!



Recipe:

3 cups rolled oats
1/2 cup chopped almonds
1/2 cup chopped walnuts
1/2 cup shredded (sweetened) coconut
1/4 cup brown sugar
1/4 cup agave
1/4 cup coconut oil
3/4 tsp salt
1 cup raisins
1/4 cup dried cranberries

Preheat oven to 250 degrees F.

In a large bowl, combine the oats, nuts, coconut, and brown sugar.

In a separate bowl, combine agave, melted coconut oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stir or toss the granola a few times for even color.

Remove from oven and transfer into a large bowl. Add raisins and dried cranberries and mix well.
