Wrap it Up! Vegan Style

This is a great quickie lunch! I like these Garden Spinach Herb Wraps from Mission, but if you don't, there are lots of choices out there. I also noticed that if I have avocado then I do not miss cheese or dairy and it's a much healthier fat. So go vegan for a meal, you would never know!
This recipe make two of the large tortilla wraps. My kids would share one.



2 Garden Spinach Herb Wraps

Filling:
1 tomato diced
1/2 avocado sliced into chunks
1/2 cup black beans (drained and rinsed)
1/4 cup bell pepper diced

Dressing:
1 TBSP olive oil
1 TBSP balsamic vinegar
1 garlic clove, crushed or minced
Squeeze of Lemon

Add all the filling ingredients to a bowl. Prepare the dressing in a separate bowl and whisk together. Pour over the filling ingredients and toss gently. Add salt and pepper to taste.
Then just split the filling in two of the tortilla wraps and fold up like a burrito. Then you eat it. Make yummy noises.
