Easy Peasy Banana "ice cream"



A great way to use up those overripe bananas! This is one of my favorite things to make in the summer. The kids think they are eating ice cream and your diet will love you for it! It's also great for babies, a cool treat for those little mouths.




Ingredients:
3-4 frozen bananas
chopped almonds and chocolate chips (optional)

Directions:
1. Peel and cut each banana in half. Put into Ziploc bags and place in the freezer.
2. When you are ready to make your ice cream, take out the frozen bananas and let them thaw for a bit. If you are in a rush, put them in the microwave for about 20-30 seconds. You want them frozen but not rock hard, a little mushy.
3. Put the bananas in your food processor with the blade attachment and watch the magic! Mine only has 3 settings: on, off and pulse, so I turn it on and the bananas will soften and blend and look just like soft serve ice cream.
4. I like to chop up some almonds and chocolate chips and sprinkle on top. YUM!
