Banana Muffins with walnuts and raisins


Are your bananas ripening on hyper speed? Mine are. Which means freeze them or make some muffins. Today, it's muffins and the kids said, "YAY!"

Makes a dozen yummy muffins!





Ingredients:

2 cups whole wheat flour
1/2 cup all purpose flour
1 tsp baking soda
1 tsp salt
4 VERY ripe bananas
1/2 cup REAL maple syrup
1 TBSP baking soda
1 TBSP vanilla
1/4 cup oil
1/2 cup raisins
1/2 cup walnut pieces

Instructions:

Heat oven to 350 degrees.

Sift flour, baking soda and salt into a large bowl.

In another bowl, mash bananas and add oil, syrup and vanilla. Mix together.

Make a well in the bowl with dry ingredients and add the liquids. Stir together just to combine and gently fold in the raisins and walnuts.

Bake in greased muffins tins or line with paper liners. I like to sprinkle some cinnamon and sugar on top before baking, it gives the top a nice crust.

Bake for 25 minutes or until a toothpick comes out clean.
