As much as I like to cook for the family, there are those times when we've had a busy day and need to be out the door in 45 minutes for soccer or Ballet or whatever and that's when you just have to have your trusty box of mac and cheese at the ready. Here's something I always do when I make mac and cheese: just when you are almost ready to strain the pasta, add in some frozen peas and corn. They cook up with the pasta and then I just mix it all together. My kids love it and don't know any different and they are getting some veggies in there too, so it's more like a power meal! Try it!
